Simple Energy Seed Balls

These simple energy balls are a great kitchen and recipe
staple!

A food processor or
blender
will help create the perfect consistency to bind these
simple energy balls. The dates and vanilla extract combine for a
subtle sweetness that goes perfectly with pumpkin seeds, shredded
coconut, and tahini. It’s a great snack to make on the weekends;
just save a batch in the freezer for later and keep a batch in the
fridge for your current week for a quick snack.

Dates are
really the star of this recipe, and here’s why: they provide
sweetness of the same caliber as their refined sugar counterparts,
and they contain loads of minerals. Dates not only taste fantastic,
they’re also very nutrient dense and are a great pantry staple to
have in your cooking arsenal.
