Loaded Quinoa Salad

A great gluten-free, grain-based salad that offers plant-based protein, fiber, and antioxidant-rich toppers.

This satisfying blend includes fresh arugula, almonds, raisins, sun-dried tomatoes, and olives. Quinoa is complemented by the bitterness of the arugula, the earthiness of the almonds, the sweetness of the raisins, and the tang of the sun-dried tomatoes and olives. When prepared on batch cooking day, it can easily be added to meals throughout the week.
